Delicacies of The Mountains


Uttarakhand, apart from being famous for its natural beauty and admired pilgrimage sites, is also known for its nutritious yet delicious cuisine. The tempting yet uncomplicated cuisine of Uttarakhand is a reflection of its people and culture – simple and unpretentious.

The food in Kumaon as well as Garhwal region is very simple yet high in nutrition and taste. The amazing and unique taste of the food is due to its desi ghee or mustard oil preparation. Being from Uttarakhand, I can assure you that if you are a food lover and love exploring new cuisines, then you will love the delicacies of my beautiful mountain state.

Here are some of the most common dishes that are cooked in almost all households in Uttarakhand.

  • Mandua or Kode ki Roti : Roti prepared from mandua, a type of grain, is a characteristic of Uttarakhand. The chapatti made from Mandua is known to be good for digestion.

  • Chainsoo : It is a highly nutritious dish prepared from roasted black dal.


  • Phanoo : Another tempting daal delicacy, Phanoo is a little different from Chainsoo, as the daals are soaked for few hours before preparing it. Green moong, arhar, chana etc. may be used for the preparation of this daal.

  • Arsa : Prepared with rice, jaggery and mustard oil, this sweet is a permanent part of any pahari celebration. Since the use of sugar has been substituted with jaggery and ghee with mustard oil, it is a healthy alternative to high-calorie sweets.

  1. interesting range of healthy foods, vivek. there is a telugu sweet called 'Arisalu' that has the same ingredients, tamilians call it 'adrisham' which is similar to Arsa. Did you observe the similarity in the name?

  4. @vivek , there is a same sweet dish as "arisa" and with same ingredients in orissa also, which you named as arsa.

    most intresting fact is that it is made on every festival of orissa in every household.
